This cake was made for a young lady who enjoys the beach and sailing.  I created a ombre color effect for each layer which is a bit difficult to see from the picture unfortunately.

Gone Fishing Birthday Cake

Mabel’s older brother was about to have another birthday again.  However, this year’s birthday is more special than others.  He was also going to retire on the day of his birthday!

Mabel’s brother, I was told, liked fishing and bright colors.  Since he was about to really “gone fishing” at leisure, I thought lounging in the fishing boat would be most appropriate.

The fishing rod has the details of reel, guides under the rod, and fishing line.  (Yes, I confess I am no fishing expert and I cheated by Googling “fishing rod” to figure out these terminologies.)

Here’s the bait box with a little lady bug resting on top.

As our fisherman lounges, little animal friends are out to check him out including the fishes that are evading the fish hook!

There are also colorful and whimsical fish swimming among water plants.

This is the ultimate relaxation cake.  Happy birthday to Mabel’s brother!

Safari Cake

Along the theme of Africa, this is a cake very simply decorated with a safari scene: A pair of giraffes walking together on an open African safari under the setting sun. This will be a place I will visit one day.

Back to Africa Cake


Not knowing that, one day, my fate was going to be intimately tied to this land, Africa seemed a place too distant to be reached as a child. Its vast species of animals and the wild beauty of its landscape have fascinated me from an early age. As a trip to this exotic land was a far dream back then, I had to settle on following “Nature”, the TV program, to give wings to my little heart to glide over the open fields and mountainsides of Africa.

Although my dream of going to Africa has not been realized just yet, an opportunity presented itself for me to celebrate the birthday of one of my dearest friend, E, by taking a trip down memory lane Back to Africa with him. E had brought back a beautiful wall ornament from African. This ornament is like a small painting. As I admired this piece of art, E explained that it was made with banana leaves, depicting a scene from an African village in the older days with traditional huts and women beating corns in a bucket. Although these traditional huts rarely exist today, E fondly remembered the times he did spend with his grandmother in huts just like these as a child.

So for E’s birthday cake, I decorated the cake with a scene from a traditional African village on top of a vanilla butter cake with raspberry chocolate ganache.

The huts are sculpted 3-D cakes covered with straws on the roof made with modeling chocolate. The huts have wooden doors and windows made with modeling chocolate.

In front of the huts, two ladies are beating corn with a wooden stick.

Another lady is carrying a water bucket on top of her head as traditional African women do.

Ah, the beauties of Africa!  My heart longs to be Back to Africa to glide over its meadows again, even it is just in a dream.  May this cake give wings to your heart, to take you Back to Africa to relive some of your fondest memories, dearest E.  And Happy Birthday!

Rabbit Birthday Cake

I made this cake for a gentleman whose Chinese zodiac sign is of the year of the Rabbit.

The rabbit and grass are made with modeling chocolate.

The cake is a banana cake with french custard filling and chocolate ganache frosting.

Snowflake Cake

What to do with a cake for a winter celebratory event?  How about snowflakes?

Growing up in the north as a child, I remember being outside on snow days, looking up to the sky with eager anticipation for the snowflakes to drift down.  I would wait for them to land on my cloths so that I could have a few seconds of taking in the beauty of each flake before they melted.  As I got older and life got more hectic, the fascination over snowflakes gradually slipped away.

I always took it for granted that everyone knew that snowflakes were hexagons.  It was not until the snow storm of last winter that I found out  that my husband, having grown up in warm climates, had no idea that snowflakes actually had shapes!  I happily pointed out each snowflake as quickly as I could for my dear husband as we excitedly waited for the snowflakes to land on the windshield.  As we observed these snowflakes in wonderment, we were also amazed at how God took so much care in the design of something as small as a snowflake and that He created no two snowflakes alike.  Each snowflake had its own structure and variation.  The curiosity over snowflakes led me to further research and I came across this website, http://www.its.caltech.edu/~atomic/snowcrystals/class/class.htm.  I then found out there were even more shapes to snowflakes then I knew!

For the snowflake cake, each snowflake looked different from the next as it should have been.  This is just a small attempt to capture a glimpse of the beauty of God’s creation which is far better.  Here are some of the snowflakes that I piped out with chocolate.  Enjoy!

Ringing in the New Year with an Afternoon Tea Cake

For a celebratory party, a client requested an Afternoon Tea Cake to ring in the new year.  He was so in love with the Afternoon Tea Cake that I made couple months ago that he wanted exactly the same cake!  Being that I do not like to “look back”, I made a more elaborate Afternoon Tea Cake to go with this special celebration of 2012.

The entire cake is edible with the exception of the 2 rods in the tea stands.  All the decorative pieces are made with modeling chocolate and sugar paste.

Here is the tea set with some gold lines and rims.

The napkins are made with gold borders for the new year occasion.

The other tea stand filled with multi color Petit Fours.

Trying to incorporate in the celebration of the new year, four plates are filled with oval cookies that shaped into “2012”.

Last but not least is a three-tier cake topped with a hand-made rose set on a golden platform.

I got a text from the client next morning letting me know that the new Afternoon Tea Cake became the attraction at the party and that the guests did not want to eat the cake but to stare at it!  I was very happy to receive the news.  Happy New Year!

The Christmas Story Cake

A few months ago when I ventured into cake decorating, my mind was already made up on the decor for the perfect Christmas cake. The cake design was inspired by a Christmas greeting card sent to me a few years before.

The card is designed like a tri-fold easel board with the two front folds cut in the shape of the scenery of Bethlehem with its ancient buildings in shades of blue, mostly tall and grand. Then when you open the two front flaps; in the midst of these buildings, sits a tiny stable that is lit up by a bright yellow light emanating from a star above; much like a spot light. In the middle of the stable is a manger enveloped in light. This scene left an unusual impression on me because of its depiction of a seemingly paradoxical situation, which we have often heard or read about but never fully grasped.

When we think of kings and lords, we think of palaces, glitter, jewels, grandeur, and many fine things. Jesus, on the other hand, was born under the most extraordinary circumstances which were completely counter intuitive to our human imagination. Jesus was not born with silver trumpets announcing His birth or with pomp and flare. He was born in a lowly, “God forsaken” place, a place that was not even meant to be resided by humans. He was born in a stable, a residence for domestic animals. Are you shocked? I am. Why did the very Son of God who was in possession of all the splendor of the universe choose to be born in a stable where animals lived, in such extraordinarily humble circumstances?

In the midst of the city of Bethlehem, this tiny stable was completely lost from sight if you did not pay attention. Why did He come in such a quiet way and in such obscurity that most people were completely unaware of an event that was to reset the course of history and the course of their lives?

I think Jesus chose to be born this way to identify with us and our human condition.  1 Corinthians 1: 26 says, “Not many of you were wise by human standards; not many were influential; not many were of noble birth.” Many of us work hard to conquer the very things said in this verse by excelling in power, knowledge, prestige or at least trying our best to dress better, appear smarter, and sound more intelligent to earn the respect “due us”.  Yet in the hearts of our hearts, in the quietness of night, a fear looms over us, over the thought of possibly losing it all and being looked down upon. So we strive even harder and hold on even tighter to secure them in our grip, only to find ourselves always feeling empty and unsatisfied over and over again.  In the depth of our souls; without these façades, most of us feel like helpless children lost in a big world, lonely, God-forsaken, and forgotten. Jesus, though God Himself, knowing full well our lowly estate, left all the majesty of heaven, not shunning the poverty in our souls and bodies, and chose to be born into the same conditions as a helpless babe into this world, rejected and forgotten by most people.  The Almighty God has not forgotten us in our helplessness.  Jesus came to show that God had a plan for us who were a far cry from what we were meant to be.  He came to make a way for us to reach God, to know Him and to walk side by side with Him.  And this is the story of Christmas:

“Do not be afraid. I bring you good news that will cause great joy for all the people. Today in the town of David a Savior has been born to you; he is the Messiah, the Lord…” (Luke 2: 11)

“The people walking in darkness have seen a great light; on those living in the land of deep darkness a light has dawned… For to us a child is born, to us a son is given, and the government will be on his shoulders. And he will be called Wonderful Counselor, Mighty God, Everlasting Father, Prince of Peace.” (Isaiah 9)

“She will give birth to a son, and you are to give him the name Jesus, because he will save his people from their sins.” (Matthew 1:21)
